What is a Dublin Coddle?


Dublin Coddle is a traditional Irish dish consisting of layers of sausages, bacon, potatoes and onions that are braised in broth to perfection. Sometimes, it can also include barley. The name comes from the word “coddle“, which derives from the French verb “caudle“, meaning 'to boil gently, parboil or stew'.
